The ingredients of Achaari Hara Mutton are a combination from all corners of Pakistan,  India and the Arab.

Recipe Of Achaari Hara Mutton:

Preparation time 50-60 minutes
Serves 4-5 peoples

Ingredients:

Mutton 1/2 kg
Oil 1/4 cup
Salt 1 tsp
All spices 1/2 tsp
Coriander powder 1 tsp

For Baghar:

Oil 2 tbsp
Mustard seeds 1/2 tsp
Onion seeds 1/2 tsp
Yogurt 1 cup
Coriander leaves 1/2 bunch

For Onion Paste:

Onion 2 large
Coriander leaves 1/2 bunch
Green Chillies 10
Ginger 2 inch piece
Garlic 10 cloves

For Achaari Masala:

Fennel seeds 1 tsp
Cumin seeds 1 tsp
Mustard seeds 1/2 tsp
Onion seeds 1/2 tsp
Fenugreek seeds 1/4 tsp

Instruction For Cooking:

1. Grind yogurt and coriander leaves half bunch in a blender and keep aside.

2. Grind all the ingredients of Onion paste separately and keep aside.

3. Coarsely crushed the achaari spices and keep aside.

4. Heat oil and add achari crushed spices, fry for 1 minute then add onion paste,  cook for 5 minutes, add in mutton,  mix well,  fry for 10 minutes, then add salt,  all spices,  coriander powder,  mix well, add 1 cup of water and cook for 15 minutes in (pressure cooker) or normal pan.

5.  Now remove from fire, open and add blended yogurt mixture, stirring continiously.

6.  Bring to boil now remove from fire, then lastly give baghar.

7.  Serve hot.

Variation In Achaari Hara Mutton:

Achaari Hara Mutton is a very versatile dish among all Pakistani and Indian cuisine.  Achaari Hara Mutton have already rich in taste with all its ingredients but you can also make it more variable by giving coal smoke to make its taste more delicious.
