Sweet Potato Muffins can be made with Sweet potatoes boiled mashed, flour, caster sugar, eggs, butter, milk, baking powder, cinnamon powder, nutmeg, salt and raisins.

Recipe Of Sweet Potato Muffins:

Preparation time 45-50 minutes
Serves 4-5 people

Ingredients:

Sugar 1 ¼ cup
Chopped Boiled sweet Potatoes 1 ¼ cup
Butter ½ cup
Milk 1 cup
Egg 1
Flour 1 ½ cup
Baking Powder 2 tsp
Cinnamon 1 ½ tsp
Nutmeg ¼ tsp
Salt ¼ tsp
Raisins ½ cup

Instruction For Cooking:

1. Combine sugar, sweet potatoes and butter.

2. Beat until smooth.

3. Beat in egg.

4. Add dry ingredients alternately with milk.

5. Do not over beat. Fold in currants.

6. Bake at 400 degrees in a gas oven for 25 to 30 minutes.

7. Serve warm.
