Recipe Of Baigan Ki Sabzi:
Preparation Time 30-40 minutes
Serves 3-4 peoples
Brinjals 1/2 kg (cut in round slices and pan fry)
Tomatoes 4 sliced
Onion seeds 1 tsp
Fennel seeds 1 tsp
Chilli powder 1 tsp heaped
Coriander powder 2 tsp
Turmeric powder 1/2 tsp
Cumin (roasted and crushed) 1 1/2 tsp
Oil 1/2 cup
Salt 1 tsp
Fresh coriander leaves 1/4 bunch
Instruction For Cooking:
1. Heat oil add onion seeds and fennel seeds. When it becomes brown add rest of seasonings.
2. Now add sliced tomatoes, cover and cook till soft.
3. Now add fried slices of brinjals, leave it on dum for 10 minutes.
4. Sprinkle fresh coriander leaves.
Variations In Baigan Ki Sabzi:
Baigan Ki Sabzi does not require much time and is prepared with minimal spices but to make it more variable you can also add potatoes in it and make your garnishing more delicious with adding fresh mint leaves.
