kheerKheer is a south Asian rice pudding made by boiling rice, milk and sugar and flavoured with cardamom, raisins cashew nuts, pistachios and almonds. Kheer is typically served during a meal or as a dessert.

A similar dessert like Kheer is caleed Firni,  it is also eaten among the Muslim community of North India and also in Pakistan, India, Iran and Afghanistan.  Today restaurants offer firni in a  wide range of flavours including apricot, mango, fig, saffron and custard apple.

Recipe Of Kheer:

Preparation time 50-60 minutes
Serves 5-6 people

Milk 2, 1/2 kg
Rice 125 gram (soaked for 2 hours dry and coarsely ground)
Sugar 1, 1/2 cup
Cardamom powder 1 tsp
Almonds 1/4 cup (blanched and grinded)
Pistachio 1/4 cup (blanched and grinded)

Instructions For Cooking:

1. Cook milk till boiling, now add coarsely grinded rice, stirring all the time, cook for 20 minutes till rice tender.

2. Now add in sugar, continue to cook till kheer thick.

3. Lastly add almonds and pistachios, green cardemom grinded.

4. Cool and serve with poori.

Variation In Kheer:

Kheer is most often made with rice. It can also be made with vermicelli.  You Can also add saffron or kesar, coconut milk, desicated coconut and fullcream milk.

Uses Of Kheer:

Kheer is prepared and eaten on almost every festival.  Kheer is also consumed at Muslim weddings and prepared on the feasts of Eid-ul-fitr and Eid-ul-adha.
