Recipe Of Kheer:
Preparation time 50-60 minutes
Serves 5-6 people
Ingredients:
Milk 2, 1/2 kg
Rice 125 gram (soaked for 2 hours dry and coarsely ground)
Sugar 1, 1/2 cup
Cardamom powder 1 tsp
Almonds 1/4 cup (blanched and grinded)
Pistachio 1/4 cup (blanched and grinded)
Instructions For Cooking:
1. Cook milk till boiling, now add coarsely grinded rice, stirring all the time, cook for 20 minutes till rice tender.
2. Now add in sugar, continue to cook till kheer thick.
3. Lastly add almonds and pistachios, green cardemom grinded.
4. Cool and serve with poori.
Variation In Kheer:
Kheer is most often made with rice. It can also be made with vermicelli. You Can also add saffron or kesar, coconut milk, desicated coconut and fullcream milk.

Kheer is prepared and eaten on almost every festival. Kheer is also consumed at Muslim weddings and prepared on the feasts of Eid-ul-fitr and Eid-ul-adha.
