Coconut milk 2-1/2 cups
Rice flour 3/4 cup
Eggs 3
Sugar 1/2 cup
Scraped coconut 1 cup
Oil 2 tbsp

Instruction For Making:

1. Place coconut milk, rice flour and eggs in a bowl.

2. Blend well Add sugar and blend again till the sugar dissolves.

3. Add 1 cup coconut and mix well.

4. Heat oil.

5. Pour a ladleful of batter on it and cook till the underside is covered with brown flecks.

6. Turnover and cook the other side similarly.

7. Make more pancakes. Keep them warm.
